Ingredients

  • Overripe bananas
  • All-purpose flour
  • Baking soda
  • Baking powder
  • Salt
  • Egg
  • Brown sugar or granulated sugar
  • Melted butter or oil
  • Vanilla extract

Optional Add-ins:

  • Ground cinnamon
  • Chocolate chips
  • Chopped walnuts

Instructions

  1. Preheat Oven: Preheat to 350°F (175°C) and line or grease a standard 12-cup muffin tin.
  2. Mash Bananas: In a large mixing bowl, mash bananas until smooth.
  3. Add Wet Ingredients: Stir in melted butter, sugar, egg, and vanilla until well combined.
  4. Add Dry Ingredients: Sprinkle flour, baking soda, baking powder, salt, and cinnamon (if using) over the wet ingredients. Gently mix just until combined—do not overmix.
  5. Fill Muffin Tin: Divide batter evenly into muffin cups, filling each about ¾ full.
  6. Add Toppings: Sprinkle chocolate chips or nuts on top if desired.
  7. Bake: Bake for 18–22 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool: Let muffins cool in the pan for a few minutes before transferring to a wire rack.

Notes

  • Use frozen bananas—thawed and drained—for extra sweetness.
  • Mix in chocolate chips, walnuts, or cinnamon sugar for added flair.
  • Substitute flax egg for a vegan-friendly version.
  • Make mini muffins by baking for 10–12 minutes instead.
