Ingredients

  • For the lemon brownies:
  • 3/4 cup all-purpose flour
  • 3/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1/4 cup fresh lemon juice
  • 1 tbsp lemon zest
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • For the lemon glaze (optional but recommended):
  • 1 cup powdered sugar
  • 23 tbsp fresh lemon juice
  • 1/2 tsp lemon zest (for garnish)

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.

  2. In a large bowl, whisk together melted butter and sugar until smooth.

  3. Add eggs, lemon juice, lemon zest, and vanilla extract. Mix until fully combined.

  4. In a separate bowl, combine flour, baking powder, and salt.

  5. Gradually stir dry ingredients into the wet ingredients until just combined.

  6. Pour batter into the prepared pan and spread evenly.

  7. Bake for 20–25 minutes, or until a toothpick comes out with moist crumbs.

  8. Let cool completely in the pan.

  9. To make the glaze, whisk together powdered sugar and lemon juice until smooth. Spread over cooled brownies and garnish with lemon zest if desired.
