Cheesy Mexican Beef Casserole is the ultimate Tex-Mex comfort food made with layers of seasoned ground beef, creamy soup, gooey cheese, and crunchy Doritos. This easy dinner bake is bold, flavorful, and family-approved—perfect for weeknights, gatherings, or when you need a quick, satisfying meal.

Ingredients

  • 1 lb ground beef
  • 1 small onion, chopped
  • 1 packet taco seasoning
  • 1 can Rotel (diced tomatoes with green chiles, undrained)
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese
  • 45 cups Nacho Cheese Doritos, lightly crushed
  • Optional Toppings:
  • Sliced jalapeños
  • Chopped cilantro
  • Diced tomatoes
  • Sliced green onions

Instructions

  1. Preheat & Prep:
Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.

  2. Cook Beef Mixture:
In a skillet over medium heat, cook ground beef and onion until browned. Drain excess grease.

  3. Season:
Stir in taco seasoning and Rotel. Simmer for 5 minutes to let flavors blend.

  4. Make Creamy Mixture:
In a separate bowl, mix cream of mushroom soup, cream of chicken soup, and sour cream until smooth.

  5. Assemble Layers:
In the baking dish, layer half of the crushed Doritos, half of the beef mixture, half of the creamy mixture, and 1 cup of cheese. Repeat with remaining ingredients, finishing with cheese on top.

  6. Bake:
Bake uncovered for 25–30 minutes, until cheese is bubbly and golden.

  7. Serve:
Let cool for 5 minutes. Top with optional garnishes like jalapeños or green onions if desired.

Notes

  • Protein Swap: Use shredded chicken or ground turkey for a variation.
  • Additions: Mix in black beans, corn, or cooked rice to bulk it up.
  • Cheese Options: Try pepper jack or a Mexican blend for extra flavor.
  • Make Ahead: Assemble up to 24 hours in advance and refrigerate until baking.
