Ingredients
For the Steak:
- 4 cube steaks
- 1 cup all-purpose flour
- 2 large eggs
- ½ cup milk or buttermilk
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt and black pepper, to taste
- Vegetable or canola oil, for frying
For the Gravy:
- 2–3 tablespoons pan drippings or butter
- 2 tablespoons all-purpose flour
- 1½ to 2 cups milk (more if needed to thin)
- Salt, to taste
- Freshly ground black pepper, to taste
Instructions
- Pat the cube steaks dry.
- Set up a breading station: one bowl with beaten eggs and milk, another with flour mixed with garlic powder, onion powder, paprika, salt, and pepper.
- Dredge each steak in the flour, then egg mixture, then back in the flour to coat thoroughly.
- Heat about ½ inch of oil in a large skillet over medium-high heat until hot.
- Fry steaks 3–4 minutes per side, until golden brown. Transfer to a paper towel-lined plate.
- For the gravy, discard excess oil, leaving 2–3 tablespoons of drippings in the skillet.
- Whisk in flour and cook for 1–2 minutes. Gradually whisk in milk until smooth.
- Simmer until thickened, then season with salt and lots of black pepper.
- Serve gravy over warm steaks.
