Ingredients
- 1 cup cottage cheese (plain)
- 2 eggs
- 1 cup rolled oats or ¾ cup oat flour
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 1–2 tbsp honey or maple syrup (optional, for added sweetness)
- 1 small apple, finely chopped or grated
- 1 tsp vanilla extract
- Pinch of salt

Preheat Oven: Preheat oven to 350°F (175°C). Lightly grease a mini muffin tin or line with silicone liners.
