Description

This Creamy French Onion Beef and Noodles is the ultimate one-pot comfort food. Tender beef simmers in savory French onion soup and beef broth, then gets folded into creamy noodles for a rich, satisfying dinner. This cozy beef and noodles recipe is easy, hearty, and perfect for busy weeknights or make-ahead meals.

Ingredients

  • Main Ingredients:
  • 1 tbsp olive oil
  • 1 lb beef stew meat (or chuck roast cut into pieces)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and black pepper, to taste
  • 1 can (10.5 oz) French onion soup
  • 2 cups beef broth
  • 8 oz egg noodles
  • Creamy Sauce Add-Ins:
  • ½ cup sour cream
  • ½ cup grated Parmesan cheese
  • Optional Topping:
  • French fried onions, for garnish

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add beef and season with garlic powder, onion powder, salt, and pepper. Sear until browned.

  2. Pour in the French onion soup and beef broth. Stir and bring to a simmer. Cook for 10 minutes to tenderize the beef.

  3. Add egg noodles, making sure they’re mostly submerged. Simmer uncovered for 10 minutes, stirring occasionally, until noodles are cooked through.

  4. Remove from heat. Stir in sour cream and Parmesan cheese until the sauce is creamy and well blended.

  5. Serve hot, garnished with French fried onions if desired.

Notes

  • Substitute stew meat with ground beef for quicker cooking.

  • Add caramelized onions or sautéed mushrooms for extra flavor.

  • For a lighter version, use low-fat sour cream and reduce the cheese.

  • To boost nutrition, stir in spinach or peas right before serving.

  • Store in an airtight container in the fridge for up to 3 days. Reheat with a splash of broth to loosen the sauce.

  • Freezes well—cool completely before freezing and thaw in fridge overnight before reheating.
