Ingredients
- 2 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 3–4 garlic cloves, minced
- 8 oz fresh mushrooms (cremini or white button), sliced
- ½ cup chicken broth
- ¾ cup heavy cream
- ⅓ cup Parmesan cheese, grated
- Fresh thyme or parsley, for garnish (optional)
Instructions
- Season chicken breasts with salt and pepper on both sides.
- Heat olive oil in a large skillet over medium heat. Sear chicken for 5–6 minutes per side or until golden and cooked through. Remove and set aside.
- In the same skillet, sauté minced garlic for 30 seconds until fragrant.
- Add mushrooms and cook for 6–8 minutes until browned and tender.
- Pour in chicken broth to deglaze the skillet, scraping up any browned bits.
- Reduce heat and stir in heavy cream and Parmesan cheese. Simmer for a few minutes until sauce thickens.
- Return chicken to the skillet. Spoon sauce over chicken and simmer for another 2–3 minutes.
- Garnish with fresh thyme or parsley if desired. Serve warm.
Notes
- Chicken thighs can be used instead of breasts for more flavor.
- Add white wine before the cream for a richer taste.
- Serve with mashed potatoes, pasta, or crusty bread to soak up the sauce.
- For a low-carb option, serve over cauliflower rice or sautéed greens.
- Make it dairy-free with coconut cream and nutritional yeast.
