Description

These Crispy Cottage Cheese Treats are the ultimate low-carb, high-protein snack—crispy on the outside, soft on the inside, and packed with cheesy flavor. Made with simple, keto-friendly ingredients, they’re quick to prepare and perfect for meal prep, snacking, or pairing with your favorite dips. No breading, no fuss—just delicious, crispy bites you’ll crave again and again.

Ingredients

  • 1 cup full-fat cottage cheese (drained)
  • 1 large egg
  • ¼ cup almond flour (or coconut flour for nut-free)
  • ½ cup shredded mozzarella or cheddar cheese
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and pepper to taste
  • Oil or cooking spray (for skillet or air fryer)

Instructions

  1. Drain excess moisture from the cottage cheese using a mesh strainer or paper towels.
  2. In a bowl, combine cottage cheese, egg, almond flour, shredded cheese, garlic powder, onion powder, salt, and pepper. Mix well to form a sticky batter.
  3. Scoop and shape into small discs or rounds using your hands or a spoon.
  4. Stovetop method: Heat a non-stick skillet with a bit of oil over medium heat. Cook bites for 3–4 minutes per side, until golden and crisp.
  5. Air fryer method: Preheat to 375°F (190°C). Air fry for 10–12 minutes, flipping halfway through.
  6. Let cool slightly before serving with your favorite dip.

Notes

  • Add chopped jalapeños, red pepper flakes, or fresh herbs for flavor variations.
  • Sprinkle shredded cheese on the skillet for an extra cheesy crust.
  • Stir in cooked veggies for a heartier version.
  • Use full-fat cottage cheese for the best texture.
  • Avoid microwaving for reheating if you want to keep the crispiness.
