Description

Crispy Parmesan Carrot Fries are a delicious and healthy alternative to traditional fries. These oven-baked fries combine the natural sweetness of carrots with savory parmesan and garlic for a flavorful, crispy snack or side dish. Perfect for any meal, they pair well with various dips and are a great way to enjoy more vegetables.

Ingredients

  • 1 lb large carrots, peeled and cut into fry shapes
  • 3 tbsp avocado oil (or olive oil)
  • 1/3 cup grated parmesan cheese
  • 4 cloves garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp smoked paprika (optional, for extra flavor)
  • 1/4 tsp red pepper flakes (optional, for a spicy kick)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. Cut the carrots into evenly sized fries to ensure uniform cooking.
  3. In a large bowl, toss the carrot fries with avocado oil, parmesan, minced garlic, salt, black pepper, smoked paprika, and red pepper flakes if using.
  4. Spread the carrots in a single layer on the prepared baking sheet, ensuring they are not overcrowded.
  5. Bake for 25-30 minutes, flipping halfway through, until the fries are golden brown and crispy.
  6. Serve immediately with your favorite dipping sauce, such as ranch, aioli, or Greek yogurt dip.

Notes

  • For extra crispiness, avoid overcrowding the baking sheet and bake at high heat.
  • Air Fryer Method: Cook at 400°F (200°C) for 15-20 minutes, shaking the basket halfway through.
  • Storage: Refrigerate leftovers in an airtight container for up to 2 days. Reheat in a 350°F (175°C) oven for 10 minutes or an air fryer at 375°F (190°C) for 5 minutes.
