Instructions
- Combine cookie crumbs with melted butter (and sugar, if using graham crackers).
- Press mixture firmly into a 9-inch pie dish. Chill for 30 minutes, or bake at 350°F (175°C) for 8–10 minutes for a firmer crust. Let cool.
- Heat heavy cream until simmering and pour over chocolate chips. Stir until melted and smooth to create a ganache.
- In a separate bowl, beat cream cheese, powdered sugar, and vanilla until smooth.
- Mix the chocolate ganache into the cream cheese mixture until well blended.
- Pour filling into the prepared crust and smooth the top.
- Chill the pie for at least 4 hours, or until fully set.
- Top with cherry pie filling, whipped cream, and chocolate shavings just before serving.
- Keep chilled until ready to serve.
