Description

This Easy Chicken Chow Mein with Savory Homemade Sauce is packed with juicy chicken, crisp veggies, tender noodles, and bold flavor. It’s a quick, customizable 25-minute dinner that brings takeout taste home—with less oil, more veggies, and a rich, silky sauce you’ll want on everything!


Ingredients

For the Chow Mein:

  • 1 lb boneless, skinless chicken breast or thighs (thinly sliced)
  • 8 oz chow mein noodles (or thin egg noodles)
  • 2 cups shredded cabbage
  • 1 cup carrots (julienned or shredded)
  • 23 green onions (sliced)
  • 2 garlic cloves (minced)
  • 12 tbsp vegetable oil or sesame oil

For the Sauce:

  • 3 tbsp soy sauce
  • 1½ tbsp oyster sauce
  • 1 tbsp hoisin sauce
  • 1 tsp brown sugar
  • ½ tsp garlic powder
  • ½ tsp ground ginger
  • 1 tsp cornstarch
  • ¼ cup water

Instructions

  1. Cook chow mein noodles according to package instructions. Drain and set aside.
  2. In a bowl, whisk together soy sauce, oyster sauce, hoisin, brown sugar, garlic powder, ginger, cornstarch, and water. Set aside.
  3. Heat oil in a large skillet or wok over medium-high heat. Cook chicken until browned and cooked through. Remove and set aside.
  4. In the same pan, sauté garlic, then add cabbage and carrots. Stir-fry until just tender.
  5. Return chicken to the pan, add noodles, and pour in the sauce.
  6. Toss everything together and cook for 2–3 more minutes, until the sauce thickens and coats the noodles evenly.
  7. Garnish with green onions and serve hot.

 


Notes

  • Add other veggies like bell peppers, mushrooms, or snow peas.
  • Swap chicken for beef, shrimp, or tofu.
  • Use low-sodium soy sauce for a lighter version.
  • Add sriracha or chili garlic sauce for extra heat.
  • Great with spaghetti or ramen if chow mein noodles aren’t available.
