Ingredients
- 1.5–2 lbs boneless, skinless chicken breasts or thighs, cut into chunks
- 2 cups fresh pineapple, peeled and cubed
- 2–3 bell peppers (red, green, yellow), chopped into chunks
- 1 red onion, cut into chunks
- 1/2 cup BBQ sauce (smoky or honey BBQ recommended)
- 2 tbsp olive oil
- Salt and pepper, to taste
- Wooden or metal skewers
Instructions
- If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
- Preheat grill to medium-high heat.
- In a large bowl, toss chicken chunks with olive oil, salt, and pepper.
- Thread chicken, pineapple, bell peppers, and onion onto skewers, alternating for a colorful mix.
- Brush skewers generously with BBQ sauce.
- Grill for 10–15 minutes, turning occasionally and brushing with more BBQ sauce, until chicken is cooked through and lightly charred.
