Description

This Hearty Kielbasa and Potato Soup is a one-pot comfort meal loaded with smoky sausage, tender potatoes, and flavorful broth. It’s easy, cozy, and perfect for a quick weeknight dinner or meal prep. Add cream for a rich twist or keep it light—either way, it’s delicious!


Ingredients

  • 12 oz kielbasa sausage, sliced into rounds
  • lbs Yukon gold or russet potatoes, diced
  • 1 medium onion, chopped
  • 2 carrots, sliced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 tbsp olive oil or butter
  • ½ tsp salt (or to taste)
  • ½ tsp black pepper
  • ½ tsp dried thyme or Italian seasoning
  • ½ cup heavy cream or milk (optional)
  • Fresh parsley (optional, for garnish)

 


Instructions

  1. In a large pot, heat olive oil or butter over medium heat. Add sliced kielbasa and cook until browned. Remove and set aside.
  2. In the same pot, sauté onion, carrots, and garlic until softened (about 4–5 minutes).
  3. Stir in diced potatoes, salt, pepper, and thyme.
  4. Pour in chicken broth and bring to a boil. Reduce heat and simmer for 15–20 minutes, until potatoes are fork-tender.
  5. Return kielbasa to the pot. Simmer for another 5 minutes to blend flavors.
  6. (Optional) Stir in heavy cream or milk for a creamy version.
  7. Serve hot, garnished with chopped parsley.

 


Notes

  • Add kale, cabbage, or spinach at the end for greens.
  • For extra heat, use spicy kielbasa or add red pepper flakes.
  • Mash some potatoes for a thicker soup.
  • Corn or white beans add great texture and protein.
  • Use gluten-free broth and kielbasa if needed.
