This Hearty Kielbasa and Potato Soup is a one-pot comfort meal loaded with smoky sausage, tender potatoes, and flavorful broth. It’s easy, cozy, and perfect for a quick weeknight dinner or meal prep. Add cream for a rich twist or keep it light—either way, it’s delicious!
Ingredients
- 12 oz kielbasa sausage, sliced into rounds
- 1½ lbs Yukon gold or russet potatoes, diced
- 1 medium onion, chopped
- 2 carrots, sliced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 tbsp olive oil or butter
- ½ tsp salt (or to taste)
- ½ tsp black pepper
- ½ tsp dried thyme or Italian seasoning
- ½ cup heavy cream or milk (optional)
- Fresh parsley (optional, for garnish)
Instructions
- In a large pot, heat olive oil or butter over medium heat. Add sliced kielbasa and cook until browned. Remove and set aside.
- In the same pot, sauté onion, carrots, and garlic until softened (about 4–5 minutes).
- Stir in diced potatoes, salt, pepper, and thyme.
- Pour in chicken broth and bring to a boil. Reduce heat and simmer for 15–20 minutes, until potatoes are fork-tender.
- Return kielbasa to the pot. Simmer for another 5 minutes to blend flavors.
- (Optional) Stir in heavy cream or milk for a creamy version.
- Serve hot, garnished with chopped parsley.
Notes
- Add kale, cabbage, or spinach at the end for greens.
- For extra heat, use spicy kielbasa or add red pepper flakes.
- Mash some potatoes for a thicker soup.
- Corn or white beans add great texture and protein.
- Use gluten-free broth and kielbasa if needed.
