Ingredients

  • Biscoff cookies
  • Unsalted butter (melted)
  • Full-fat cream cheese (softened)
  • Biscoff spread
  • Whipped topping or heavy cream (whipped to stiff peaks)

Instructions

  1. Make the Crust: Crush Biscoff cookies into fine crumbs and mix with melted butter. Press firmly into the base of a springform pan. Chill while preparing filling.
  2. Prepare Filling: Beat softened cream cheese until smooth. Add Biscoff spread and mix until well combined.
  3. Fold in Cream: Gently fold in whipped topping or whipped cream until light and fluffy.
  4. Assemble Cheesecake: Pour the filling over the chilled crust. Smooth the top and refrigerate for at least 4 hours or overnight until set.
  5. Optional Toppings: Before serving, drizzle with melted Biscoff spread or sprinkle with crushed Biscoff cookies for garnish.
