Ingredients
- 1 cup rolled oats
- 2 tablespoons chia seeds
- 1½ cups whole wheat flour (or all-purpose/gluten-free blend)
- 1½ teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- ¾ cup Greek yogurt or plant-based yogurt
- 2 large eggs
- ½ cup milk (dairy or non-dairy)
- 2 tablespoons maple syrup or honey (optional)
- 1 tablespoon apple cider vinegar
Instructions
- Preheat oven to 350°F (175°C). Line a loaf pan with parchment paper or grease it well.
- In a large bowl, combine oats, chia seeds, flour, baking powder, baking soda, and salt.
- In a separate bowl, whisk together yogurt, eggs, milk, maple syrup (if using), and vinegar until smooth.
- Pour wet ingredients into dry ingredients and stir until just combined. Batter will be thick.
- Transfer batter to the prepared pan and smooth the top.
- Bake for 45–55 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
