Description

Ingredients

  • ¾ cup pastina (tiny star-shaped pasta)
  • 4 cups chicken broth or vegetable broth
  • 1 egg (optional, for added richness)
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon butter
  • Salt and pepper to taste
  • Fresh parsley (optional, for garnish)

Instructions

  1. In a medium pot, bring the broth to a gentle boil.
  2. Stir in the pastina and cook according to package instructions (usually 5–7 minutes), until tender.
  3. If using an egg, whisk it in a bowl. Slowly drizzle it into the simmering soup while stirring to create a silky texture.
  4. Remove from heat. Stir in butter and Parmesan until melted and smooth.
  5. Season with salt and pepper to taste.
  6. Ladle into bowls and garnish with chopped parsley if desired. Serve warm.
