Description

Pineapple Upside Down Mimosas are a fun and tropical brunch cocktail that captures the sweet flavor of pineapple upside down cake in a glass. This vibrant layered mimosa combines pineapple juice, grenadine, and sparkling wine for a refreshing, colorful drink perfect for special occasions, brunches, or casual celebrations.


Ingredients

  • 812 tbsp pineapple juice (23 tbsp per glass)
  • 4 tbsp grenadine (1 tbsp per glass)
  • 1 bottle champagne, prosecco, or sparkling wine (chilled)
  • 4 maraschino cherries (for garnish)
  • 4 small pineapple wedges (optional, for garnish)

Instructions

  1. Pour 2–3 tablespoons of pineapple juice into the bottom of each champagne flute or wine glass.

  2. Slowly top with chilled sparkling wine until the glass is nearly full. Pour gently to preserve the bubbles.

  3. Carefully drizzle 1 tablespoon of grenadine into each glass so it settles at the bottom, creating a layered effect.

  4. Garnish each glass with a maraschino cherry and an optional pineapple wedge on the rim.

  5. Serve immediately while cold and bubbly.


Notes

  • For a mocktail version, use sparkling cider or lemon-lime soda in place of the sparkling wine.

  • Add a splash of coconut rum or vanilla vodka for a stronger cocktail.

  • For a “cake” flavor, add a dash of vanilla extract to the pineapple juice before pouring.

  • Always pour the grenadine slowly to maintain the layered look.
