Description
Pineapple Upside Down Mimosas are a fun and tropical brunch cocktail that captures the sweet flavor of pineapple upside down cake in a glass. This vibrant layered mimosa combines pineapple juice, grenadine, and sparkling wine for a refreshing, colorful drink perfect for special occasions, brunches, or casual celebrations.
Ingredients
- 8–12 tbsp pineapple juice (2–3 tbsp per glass)
- 4 tbsp grenadine (1 tbsp per glass)
- 1 bottle champagne, prosecco, or sparkling wine (chilled)
- 4 maraschino cherries (for garnish)
- 4 small pineapple wedges (optional, for garnish)
Instructions
-
Pour 2–3 tablespoons of pineapple juice into the bottom of each champagne flute or wine glass.
-
Slowly top with chilled sparkling wine until the glass is nearly full. Pour gently to preserve the bubbles.
-
Carefully drizzle 1 tablespoon of grenadine into each glass so it settles at the bottom, creating a layered effect.
-
Garnish each glass with a maraschino cherry and an optional pineapple wedge on the rim.
-
Serve immediately while cold and bubbly.
Notes
-
For a mocktail version, use sparkling cider or lemon-lime soda in place of the sparkling wine.
-
Add a splash of coconut rum or vanilla vodka for a stronger cocktail.
-
For a “cake” flavor, add a dash of vanilla extract to the pineapple juice before pouring.
-
Always pour the grenadine slowly to maintain the layered look.

These are best made to order—do not store leftovers.
