Description

These Quick and Delicious French Toast Muffins are a cozy, handheld twist on classic French toast—crispy on the outside, soft and custardy on the inside. Perfect for weekend brunch or meal prep, they’re easy to make, customizable, and irresistibly tasty.

Ingredients

  • Day-old bread (brioche, challah, or French bread work best)
  • Eggs
  • Milk or half-and-half
  • Maple syrup or honey
  • Vanilla extract
  • Ground cinnamon
  • Nutmeg (optional)
  • Salt
  • Butter (for greasing muffin tin)

Optional toppings:

  • Powdered sugar
  • Maple syrup
  • Fresh berries

Instructions

  1. Preheat Oven: Preheat to 350°F (175°C). Grease muffin tin with butter or nonstick spray.
  2. Prep Bread: Cut bread into small cubes and fill each muffin cup about ¾ full.
  3. Make Custard: In a bowl, whisk together eggs, milk, maple syrup, vanilla, cinnamon, nutmeg, and salt.
  4. Combine: Pour custard evenly over bread cubes. Press down lightly to help absorb the liquid. Let sit for 5 minutes.
  5. Bake: Bake for 20–25 minutes, until tops are golden and centers are set.
  6. Cool & Serve: Let cool slightly. Serve warm with optional toppings like powdered sugar, berries, or syrup.

Notes

  • Sturdy, slightly stale bread works best for structure and flavor absorption.
  • Add-ins like blueberries, diced apples, or chocolate chips add variety.
  • Swap in almond milk and coconut oil for a dairy-free version.
  • These muffins freeze and reheat well, making them ideal for meal prep.
