Ingredients
- Granulated sugar
- Heavy cream
- Unsalted butter
- Vanilla extract
- Sea salt or flaky salt (plus extra for topping)
- Semi-sweet or dark chocolate (for coating)
Optional:
- Light corn syrup (for smoother caramel texture)
- Chocolate sprinkles or crushed nuts (for decoration)
Instructions
- Make Caramel: In a saucepan over medium heat, melt the granulated sugar, stirring constantly, until it turns deep amber.
- Add Cream & Butter: Carefully add butter, then pour in heavy cream while whisking. Let it bubble and thicken for 1–2 minutes.
- Flavor: Remove from heat. Stir in vanilla extract and a pinch of sea salt.
- Chill: Pour caramel into a dish and chill in the fridge for 1–2 hours until firm.
- Form Balls: Scoop and roll chilled caramel into small balls. Freeze for 20–30 minutes.
- Melt Chocolate: In a heat-safe bowl, melt chocolate using a double boiler or microwave in short intervals.
- Coat Truffles: Dip each frozen caramel ball in melted chocolate and place on parchment paper.
- Garnish: Sprinkle with flaky sea salt or desired toppings before chocolate sets.
- Set & Store: Chill until firm. Store in fridge until ready to enjoy.
