Description

These Salted Caramel Truffles are rich, creamy, and irresistibly indulgent. With a luscious homemade caramel center coated in silky chocolate and topped with flaky sea salt, these no-bake treats are perfect for gifting, special occasions, or simply satisfying your sweet tooth.

 


Ingredients

  • Granulated sugar
  • Heavy cream
  • Unsalted butter
  • Vanilla extract
  • Sea salt or flaky salt (plus extra for topping)
  • Semi-sweet or dark chocolate (for coating)

Optional:

  • Light corn syrup (for smoother caramel texture)
  • Chocolate sprinkles or crushed nuts (for decoration)

Instructions

  1. Make Caramel: In a saucepan over medium heat, melt the granulated sugar, stirring constantly, until it turns deep amber.
  2. Add Cream & Butter: Carefully add butter, then pour in heavy cream while whisking. Let it bubble and thicken for 1–2 minutes.
  3. Flavor: Remove from heat. Stir in vanilla extract and a pinch of sea salt.
  4. Chill: Pour caramel into a dish and chill in the fridge for 1–2 hours until firm.
  5. Form Balls: Scoop and roll chilled caramel into small balls. Freeze for 20–30 minutes.
  6. Melt Chocolate: In a heat-safe bowl, melt chocolate using a double boiler or microwave in short intervals.
  7. Coat Truffles: Dip each frozen caramel ball in melted chocolate and place on parchment paper.
  8. Garnish: Sprinkle with flaky sea salt or desired toppings before chocolate sets.
  9. Set & Store: Chill until firm. Store in fridge until ready to enjoy.

 


Notes

  • Freeze caramel balls before coating to help prevent leaking.
  • Add a splash of bourbon or espresso for a grown-up twist.
  • Store-bought caramel can be used in a pinch—just make sure it’s thick enough.
  • Use dark chocolate for a richer flavor, or milk chocolate for a sweeter option.
  • Drizzle with white chocolate for a decorative finish.
