Ingredients
- 1 lb ground beef (lean)
- 1 medium red onion, chopped
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 medium zucchini, chopped
- 1 cup cherry tomatoes, halved
- 3 garlic cloves, minced
- 2 tbsp olive oil
- 1 tsp ground cumin
- 1 tsp dried oregano
- 1/2 tsp paprika
- Salt and black pepper to taste
- 2 tbsp fresh parsley or mint, chopped (for garnish)
- 1 tbsp fresh lemon juice
Instructions

Heat olive oil in a large skillet over medium heat.

Add ground beef and cook until browned, breaking it apart as it cooks.

Stir in chopped red onion and garlic. Cook until softened and fragrant.

Add bell peppers and zucchini. Stir and cook for 5–7 minutes until tender-crisp.

Add cherry tomatoes and season with cumin, oregano, paprika, salt, and pepper. Cook for another 2–3 minutes.
