Description

These Savory Mongolian Ground Beef Noodles are a fast and flavorful dinner made with garlicky ground beef, tender noodles, and a sweet-and-savory Mongolian sauce. Ready in under 30 minutes, this easy stir-fry is bold, comforting, and perfect for busy weeknights.

Ingredients

  • Ground beef (lean or regular)
  • Noodles (ramen, spaghetti, or lo mein-style)
  • Soy sauce
  • Brown sugar
  • Garlic, minced
  • Ginger, grated or minced
  • Cornstarch
  • Water
  • Sesame oil
  • Vegetable oil
  • Green onions, sliced
  • Red pepper flakes or sriracha (optional for heat)

Instructions

  1. Cook noodles according to package directions, drain, and set aside.
  2. In a small bowl, whisk together soy sauce, brown sugar, water, cornstarch, and sesame oil to form the sauce.
  3. Heat vegetable oil in a skillet or wok over medium-high heat.
  4. Add ground beef and cook until browned, breaking it apart as it cooks.
  5. Stir in garlic and ginger; cook for 1 minute until fragrant.
  6. Pour in the sauce mixture and simmer until thickened, coating the beef.
  7. Add cooked noodles and toss to coat.
  8. Stir in green onions and red pepper flakes or sriracha, if using.
  9. Serve hot.

Notes

  • Add veggies: Mix in broccoli, snap peas, or shredded carrots for added texture.
  • Spicy option: Add chili paste or extra sriracha for more heat.
  • Noodle alternatives: Try udon, linguine, rice noodles, or zucchini noodles.
  • Meat swaps: Ground turkey or chicken work well.
  • Low-carb: Serve over spiralized veggies or cauliflower rice.
  • Storage: Store in an airtight container for up to 3 days. Reheat in a skillet with a splash of water or soy sauce for best results.
