Description

Slow Cooker Garlic Butter Beef Bites & Potatoes is a hearty, comforting meal featuring tender beef cubes and baby potatoes simmered in a rich garlic butter sauce. Perfect for busy weeknights, this set-it-and-forget-it crockpot recipe delivers deep, savory flavor with minimal prep and maximum comfort.

Ingredients

  • 23 lbs beef stew meat or beef chuck, cut into 1– to 2-inch cubes
  • 1 lb baby potatoes, halved or quartered
  • 4 tablespoons unsalted butter
  • 6 cloves garlic, minced
  • 1 cup beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)
  • 1 tablespoon fresh thyme (or 1 teaspoon dried)
  • Salt and pepper, to taste
  • Optional garnish: chopped fresh parsley

Instructions

  1. Prep: Season beef cubes with salt and pepper. Halve or quarter baby potatoes as needed.

  2. Layer: Place beef and potatoes in the slow cooker. Add garlic, rosemary, and thyme.

  3. Sauce: In a small saucepan or microwave-safe bowl, melt the butter. Stir in beef broth and Worcestershire sauce.

  4. Combine: Pour garlic butter sauce evenly over beef and potatoes.

  5. Cook: Cover and cook on low for 7–8 hours or high for 4–5 hours, until beef is tender and potatoes are soft.

  6. Serve: Gently stir before serving. Garnish with fresh parsley, if desired.

Notes

  • Add red pepper flakes or hot sauce for a spicy kick.
  • Mix in carrots, celery, or green beans for added veggies.
  • Swap herbs like basil or oregano to change the flavor profile.
  • Naturally gluten-free and low-carb.
  • Sauce too thick? Add more broth. Too thin? Cook uncovered at the end to reduce.
