Ingredients
- 1 lb ground beef
- 2 medium sweet potatoes, peeled and diced
- 2 tbsp olive oil
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup diced tomatoes (canned or fresh)
- 1 cup corn (frozen or canned)
- 1½ tsp chili powder
- 1 tsp cumin
- ½ tsp smoked paprika
- Salt and black pepper, to taste
- Fresh cilantro, chopped (for garnish)
- Lime wedges (optional, for serving)
Instructions

Heat olive oil in a large skillet over medium heat. Add diced sweet potatoes and sauté for 8–10 minutes, until starting to soften.

Stir in onion and garlic. Cook until the onion is translucent and fragrant, about 3 minutes.

Add ground beef and cook until browned, breaking it apart with a spoon. Drain excess grease if needed.

Season with chili powder, cumin, smoked paprika, salt, and pepper. Stir to coat.

Mix in black beans, diced tomatoes, and corn. Simmer for 5–10 minutes, until sweet potatoes are fork-tender.
