- ¼ cup fresh lemon juice (about 2 lemons)
- 2–3 tablespoons honey or agave syrup, to taste
- ¾ cup water
Instructions
- In a blender, combine strawberries, lemon juice, honey (or agave), and water.
- Blend until smooth. Taste and adjust the sweetness or tartness if needed.
- Pour the mixture into popsicle molds (use a funnel for easier pouring).
- Insert popsicle sticks and freeze for 3–4 hours until solid.
- To release popsicles, run warm water over the outside of the molds for a few seconds.
Notes
- Swap lemon juice for lime juice for a zesty variation.
- For a creamy twist, blend in Greek yogurt or coconut milk.
- Add other berries like blueberries or raspberries for a mixed berry version.
- Freeze in layers for a fun striped look.
- For herb-infused flavor, blend with fresh mint or basil.
- Strain the mixture before freezing for seedless popsicles.
