Description

This Tuscan Artichoke Tomato Salad is a fresh, no-cook Mediterranean salad loaded with marinated artichokes, juicy tomatoes, herbs, and a zesty vinaigrette. Perfect as a vibrant side dish or light lunch, it’s healthy, easy, and full of rustic Italian flavor!


Ingredients

  • 1 jar (12 oz) marinated artichoke hearts, drained and chopped
  • 1 cherry or grape tomatoes, halved
  • 1/2 small red onion, thinly sliced
  • 1/4 cup fresh basil leaves, torn or chopped
  • 2 tbsp fresh parsley, chopped
  • 3 tbsp extra virgin olive oil
  • 1 tbsp red wine vinegar or fresh lemon juice
  • 1 garlic clove, minced
  • Salt and black pepper to taste
  • Optional: 1/4 cup Kalamata olives, shaved Parmesan, or a handful of arugula

Instructions

  1. In a large bowl, combine chopped artichoke hearts, halved tomatoes, and sliced red onion.

  2. Add fresh basil and parsley to the bowl.

  3. In a small bowl, whisk together olive oil, vinegar or lemon juice, minced garlic, salt, and pepper.

  4. Pour the dressing over the salad and toss gently to coat.

  5. Let the salad rest for at least 10 minutes before serving to enhance flavor.

  6. Optional: Top with shaved Parmesan, olives, or arugula for added flavor and texture.
