Ingredients
- 1 jar (12 oz) marinated artichoke hearts, drained and chopped
- 1 cherry or grape tomatoes, halved
- 1/2 small red onion, thinly sliced
- 1/4 cup fresh basil leaves, torn or chopped
- 2 tbsp fresh parsley, chopped
- 3 tbsp extra virgin olive oil
- 1 tbsp red wine vinegar or fresh lemon juice
- 1 garlic clove, minced
- Salt and black pepper to taste
- Optional: 1/4 cup Kalamata olives, shaved Parmesan, or a handful of arugula

In a large bowl, combine chopped artichoke hearts, halved tomatoes, and sliced red onion.
